  • 1 lb ground chicken or turkey for a lighter option
  • 1 large yellow onion, diced adds sweetness
  • 3 cloves garlic, minced for a fragrant boost
  • 4 cups chicken broth low-sodium is best
  • 8 oz cream cheese, softened can substitute with Greek yogurt for a lighter version
  • 1 cup heavy cream for extra creaminess
  • 2 cups fresh spinach or kale for a heartier green
  • 1 tsp Italian seasoning for that classic lasagna flavor
  • 8 oz lasagna noodles, broken into pieces no need to pre-cook
  • 1 cup mozzarella cheese, shredded for topping
  • 1/2 cup Parmesan cheese, grated adds a nice salty finish

Instructions
 

  • In a large pot, heat a drizzle of olive oil over medium heat. Add the ground chicken and cook until browned, about 5-7 minutes. The chicken should be no longer pink, and you’ll smell a delicious aroma.
  • Next, stir in the diced onion and minced garlic. Cook until the onion is translucent, about 3-4 minutes. This step adds a wonderful flavor base to your soup.
  • Pour in the chicken broth and bring the mixture to a gentle boil. You’ll want to see some bubbles forming. This usually takes about 5 minutes.
  • Reduce the heat and add the softened cream cheese, stirring until it’s fully melted and creamy. The soup will start to thicken, and you’ll see a lovely, smooth texture.
  • Add the heavy cream and spinach, stirring until the spinach wilts down. This should take about 2-3 minutes. The vibrant green color will brighten up your soup!
  • Sprinkle in the Italian seasoning and broken lasagna noodles. Let it simmer for about 10-12 minutes, or until the noodles are tender. Keep an eye on it, as you want the noodles to be cooked but not mushy.
  • Finally, stir in the mozzarella and Parmesan cheese until melted. The soup should be bubbling and cheesy. Serve it warm with some crusty bread on the side.
