Ingredients
- 1 lb Italian sausage, casing removed You can substitute with ground turkey or chicken for a lighter option.
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth Low-sodium broth works well.
- 1 cup heavy cream For a lighter version, use half-and-half.
- 8 oz cream cheese, softened This is the star of our creamy base!
- 2 cups fresh spinach, chopped You can use frozen spinach, just thaw and drain it.
- 8 oz lasagna noodles, broken into pieces No-boil noodles can be used too.
- 1 cup mozzarella cheese, shredded Feel free to mix in some cheddar for extra flavor.
- 1/2 cup Parmesan cheese, grated

- In a large pot, brown the Italian sausage over medium heat, breaking it apart with a spoon. Cook until it's no longer pink, about 5-7 minutes, and let the delicious aroma fill your kitchen. 
- Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes. 
- Pour in the chicken broth and bring it to a gentle boil. As it heats, scrape the bottom of the pot to release any tasty bits stuck there. 
- Stir in the heavy cream and softened cream cheese. Whisk until the cream cheese is fully melted and the mixture is smooth. 
- Add the chopped spinach and broken lasagna noodles. Simmer for about 15 minutes, or until the noodles are tender. 
- Once the noodles are cooked, stir in the mozzarella and Parmesan cheese. Let it melt into the soup. 
- Serve hot, garnished with extra cheese or fresh herbs if desired.
