Ingredients
- 1 lb lb Italian sausage, casings removed You can substitute with ground turkey or chicken for a lighter option.
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1 can 28 oz crushed tomatoes Use fire-roasted for extra flavor.
- 4 cups chicken broth Vegetable broth works too.
- 2 tsp Italian seasoning
- 8 oz lasagna noodles, broken into pieces You can use any pasta shape you like.
- 1 cup ricotta cheese Substitute with cottage cheese if desired.
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- to taste Fresh basil, for garnish You can use dried basil if fresh is unavailable.
- In a large pot, cook the Italian sausage over medium heat, breaking it up with a spoon. Sauté until browned and no longer pink, about 5-7 minutes. 
- Add the diced onion and minced garlic to the pot. Cook until the onion is translucent, about 3-4 minutes. 
- Stir in the crushed tomatoes, chicken broth, and Italian seasoning. Bring the mixture to a boil, then reduce the heat and let it simmer for about 5 minutes. 
- Add the broken lasagna noodles to the pot. Cook for about 10 minutes, or until the noodles are tender. 
- Once the noodles are cooked, stir in the ricotta cheese until well combined. 
- Remove the pot from heat and stir in the shredded mozzarella and Parmesan cheese. 
- Ladle the soup into bowls and garnish with fresh basil. Serve hot.
