Ingredients
  

Forgotten Chicken and Rice

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 can water use empty soup can for measurement
  • 1 envelope onion soup mix
  • 1 tbsp butter for greasing the baking dish

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish with butter to prevent sticking.
  • In a mixing bowl, combine uncooked rice, cream of chicken soup, cream of mushroom soup, and water. Stir until well blended.
  • Pour the rice and soup mixture into the prepared baking dish, spreading it evenly.
  • Place the chicken breasts on top of the rice mixture.
  • Sprinkle the onion soup mix evenly over the chicken and rice.
  • Cover the dish tightly with aluminum foil.
  • Bake in the preheated oven for 1 hour and 15 minutes.
  • Let the dish rest for 10 minutes before serving to allow flavors to meld.

Notes

For a richer flavor, use chicken broth instead of water. Add vegetables like frozen peas or carrots for a more complete meal.
