Batter

yellow cornmeal
medium-ground for best texture

all-purpose flour

baking powder

buttermilk

Instructions
In a large bowl, mix together the cornmeal, flour, baking powder, and salt.
In a separate bowl, whisk together the buttermilk and egg.
Slowly pour the wet ingredients into the dry ingredients, stirring until just combined.
Heat a cast iron skillet over medium-high heat and add oil or butter.
Using a ladle, pour small portions of batter into the hot skillet.
Cook for 2-3 minutes until golden brown, then flip and cook for another 2 minutes.
Transfer to a paper towel-lined plate and serve immediately with butter and honey.
Notes
For extra crispiness, make sure the skillet is properly preheated before adding the batter.
