Ingredients
  

Batter

  • 1 cup yellow cornmeal medium-ground for best texture
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup buttermilk
  • 1 egg
  • 2 tbsp oil or butter for frying

Instructions
 

  • In a large bowl, mix together the cornmeal, flour, baking powder, and salt.
  • In a separate bowl, whisk together the buttermilk and egg.
  • Slowly pour the wet ingredients into the dry ingredients, stirring until just combined.
  • Heat a cast iron skillet over medium-high heat and add oil or butter.
  • Using a ladle, pour small portions of batter into the hot skillet.
  • Cook for 2-3 minutes until golden brown, then flip and cook for another 2 minutes.
  • Transfer to a paper towel-lined plate and serve immediately with butter and honey.

Notes

For extra crispiness, make sure the skillet is properly preheated before adding the batter.
