  • 12 oz pasta spaghetti, penne, or fusilli
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup onion finely chopped
  • 1 1/2 cups cherry tomatoes halved
  • 2 cups fresh spinach loosely packed
  • 1/2 tsp red pepper flakes optional, for heat
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup reserved pasta water if needed for sauce
  • 1/4 cup grated Parmesan cheese for serving

Instructions
 

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onions, and sauté until fragrant and onions are softened.
  • Add cherry tomatoes and red pepper flakes. Cook for 3-4 minutes, stirring occasionally, until the tomatoes start to break down and release their juices.
  • Add fresh spinach and cook for another 2 minutes until wilted.
  • Toss in the cooked pasta and mix well. If the sauce seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  • Season with salt and black pepper. Serve immediately with grated Parmesan cheese.

Notes

For a protein boost, add grilled chicken or shrimp. To make it vegan, skip the Parmesan or use a plant-based alternative.
